Easy Summer Appetizer Recipe – Caprese Bites

Caprese Bites Recipe

This is the perfect recipe for a quick and easy summer appetizer to serve when hosting guests at your home or if attending a family or friends barbeque or summer gathering.  This is my ‘GO-TO’ recipe every summer – as it does not require turning on the oven, thus heating up the kitchen, and can be made in less than 15 minutes.

There are a lot of versions of this recipe but this one has pepperoni added, which I like, because they can be bought packaged and added to each of the bites – but you can certainly leave the pepperoni off each bite, if you want a vegetarian version of these appetizers.

Here is the quick recipe-

Caprese Bites 

(Makes 24)

24 Mini Mozzarella Balls (optional – I like to buy the rolls or pre-sliced Mozzarella and cut into smaller pieces)

24 Basil Leaves

24 Slices of Pepperoni (optional – Bruschetta is great too, but will cost quite a bit more)

24 Small Cherry Tomatoes

24 Toothpicks (or short skewers)

Thread the mozzarella ball or slice first then fold the pepperoni in half and half again and thread onto the toothpick.  Next add the basil leaf then the tomato.  Arrange all your assembled bites on a serving dish or plate.

Summer Appetizer Recipe

Basil Vinaigrette

Mix all in a bowl and chill in the fridge for about 30 minutes.   You can chill your assembled bites too.

1/3 Cup Olive Oil

1 Tablespoon White Balsamic Vinegar

¼ teaspoon Garlic Powder

1 Scallion, finely minced

6 Basil leaves, chopped fine

Pinch of salt

6 Grinds of Black Pepper

Drizzle your basil vinaigrette over the bites just before serving.

Appetizer Recipe

If you are taking your appetizers on the go to a friends or family gathering, just mix your vinaigrette in a very small tupperware container- so it’s easier to travel with and you can easily shake it up before applying to your bites.  Super easy and fast! I LOVE these and highly recommend them for your next summer event.

Actually this easy sweet summer treat is more like a fast how to, rather than a recipe.  Seriously, it’s as simple as cutting your store bought ice cream sammies in half-

. . . and then roll your edges of each ice cream bar in some rainbow sprinkles and add a lollipop stick. Done!

You can serve them immediately or put them back in the freezer to chill before serving. The rainbow sprinkles are great for coordinating to any theme but you can change up your colors of your sprinkles to match any party.  They look stunning standing up on display too.
