Rainbow Ice Cream Sandwiches Recipe

RECIPE FOR RAINBOW ICE CREAM SANDWICHES

Mini-Ice-Cream-Sandwich-Pops-7

Actually this easy sweet summer treat is more like a fast how to, rather than a recipe.  Seriously, it’s as simple as cutting your store bought ice cream sammies in half-

. . . and then roll your edges of each ice cream bar in some rainbow sprinkles and add a lollipop stick. Done!

You can serve them immediately or put them back in the freezer to chill before serving. The rainbow sprinkles are great for coordinating to any theme but you can change up your colors of your sprinkles to match any party.  They look stunning standing up on display too.

These are a perfect treat for kids and adults and ideal for summer to keep your guests cool at a barbeque or pool party.

CHICKEN RECIPE EASY AND QUICK

The holidays bring on plenty of baking and cooking and sometimes you just need an easy go to recipe that you can whip out fast and with little effort.  This is a recipe that I make all year around- its great in the summer but also yummy comfort food for a winter dinner.

It only takes about 10 minutes prep time and bakes up quickly and requires only a few ingredients.  During the summer we like to eat it with a salad or fresh vegetables and in the winter I usually add a side of rice, quick box pasta, or even mashed potatoes.  This baked chicken is crispy and pairs well with any side dish.

Ingredients

  • 2 cups (4 oz.) FRENCH’S® Original or Cheddar French Fried Onions
  • 2 Tbsp. all-purpose flour
  • 4 (5 oz.) boneless, skinless chicken breast halves, cut into cubes
  • 1 egg, beaten

Directions

PLACE French Fried Onions and flour into plastic bag. Lightly crush with hands or with rolling pin. Transfer to pie plate or waxed paper.
DIP chicken into egg; then coat with onion crumbs, pressing firmly to adhere. Place chicken on baking sheet.
BAKE at 400°F for 20 min. or until no longer pink in center.

I hope this quick baked chicken recipe makes your holiday cooking a little more stress free.

Give it a whirl, its tried and true and I promise you will love it!
